Another week where I feel like a cheater even posting this.  We won’t be home for 3 days this week (although, this is the last weekend we are traveling for a long, long time!), and I’ve got a lot of leftovers in the fridge.
June 20 – June 26
MONDAY
Breakfast: eggs, toast, fruit
Lunch: grilled cheese, tomato soup, salad
Dinner: veggie and chicken stir fry, brown rice

TUESDAY
Breakfast: cherry chai granola, yogurt, fruit
Lunch: sandwiches, salad
Dinner: roasted beet salad with watercress, lentils, soprasseta, and goat cheese

WEDNESDAY:
Breakfast: oatmeal, fruit
Lunch: out
Dinner: summer vegetable and bean soup, homemade bread

THURSDAY:
Breakfast: eggs, toast, fruit
Lunch: sandwiches, fruit, veggies
Dinner: honey mustard chicken thighs, baked tomatoes, garlic roasted green beans

FRIDAY:
Breakfast: oatmeal, fruit
Lunch: on the road
Dinner: out

SATURDAY:
Breakfast: out
Lunch: out
Dinner: out

SUNDAY:

Bigelow Vanilla Chai Tea.  If I’m craving something sweet, I make myself a cup of this and add a splash of milk.  Yum.

Summery sandals.  So pretty.

Ole Henriksen Invigorating Night Gel.  I just started using this a few days ago and I can already see the results.

My new vinyl calendar.  I like the look of stainless steel appliances, but miss my wipe off magnetic calendar.  This was done with the Cricut and I love how easy it is!

The Hunger Games Trilogy.  I literally could not put these down and stayed up all night reading them.  Great characters and a well paced story.  I hear that a movie version is in the works and I can’t wait!

You MUST make this cake, and make it soon.  Peaches.  Cornmeal.  Lavender.  Swoon.

This would be so yummy at a baby shower or tea party.  It was especially good with a cup of Early Grey, hot.  50 points to you if you know where that’s from ;-).

TUESDAY
Breakfast: baked oatmeal with peaches
Lunch: turkey sandwiches, sweet potato fries, fruit
Dinner: yucatan black beans and rice, sautéed zucchini and tomatoes

WEDNESDAY:
Breakfast: yogurt, fruit, granola
Lunch: sandwiches, soup
Dinner: girl scout end of year picnic

THURSDAY:
Breakfast: leftover baked oatmeal & yogurt
Lunch: taco salad
Dinner: broccoli and tofu stif fry, brown rice, fruit salad

FRIDAY:
Breakfast: eggs, toast, fruit
Lunch: soup, sandwiches
Dinner: baked macaroni and cheese with ham peas, salad

SATURDAY:
Breakfast: french toast, fruit
Lunch: leftovers
Dinner: bbq chicken pizza, salad, fruit

SUNDAY:
Breakfast: biscuits and sausage gravy, fruit salad
Lunch: toasted chickpea and plum salad
Dinner brisket, corn on the cob, asparagus, salad, devil’s food cake

So I feel like kind of a cheater by even posting this.  We’re gone again this weekend (What can I say?  We’re making sure that the gas companies stay in business!) and the husband is away all week.  In all honesty, we’re going to be having a lot of take out and cereal.  I do plan to do some baking with some awesome looking peaches that were delivered by the produce people, but that’s about as ambitious as I will get!
June 6 – June 12
MONDAY
Breakfast: eggs, toast, fruit
Lunch: leftovers
Dinner: bbq chicken, corn on the cob, chopped salad

TUESDAY
Breakfast: strawberry rhubarb baked oatmeal, yogurt
Lunch: out
Dinner: taco pizza (probably take out)

WEDNESDAY:
Breakfast: eggs, toast, veggies
Lunch: out
Dinner: spaghetti and meatballs, roasted broccoli and cauliflower,

THURSDAY:
Breakfast: more baked oatmeal and yogurt
Lunch: leftovers
Dinner: tuna melts, salad…maybe take out again 😛

We’ve got quite the busy month ahead.  Weddings, birthdays, friends to visit before they move to Germany, Father’s Day, last day of school, last few weeks of Girl Scouts…needless to say, we won’t be here any of the weekends this month and a lot of our dinners during the week will be out.  So, the menus will be rather light.

I did get this done yesterday, but slacked on posting until today.  The green curry chicken is simmering away as I type.  Nummers.

May 30 – June 5
MONDAY
Breakfast: eggs, toast, fruit
Lunch: leftovers
Dinner: smoked ribs, corn on the cob, spinach salad, fruit salad

TUESDAY
Breakfast: yogurt, fruit, granola
Lunch: taco salad, fruit
Dinner: green chicken curry over brown basmati rice, fruit

WEDNESDAY:
Breakfast: pancakes, eggs, sausage
Lunch: mac & cheese with peas and ham, salad
Dinner: soba with pork and mango, steamed bok choy

THURSDAY:
Breakfast: eggs, toast, fruit
Lunch: black bean pumpkin soup with salad
Dinner: beans and cornbread

pretty butterflies

I saw this cute idea on the lovely Whatever blog earlier this week.  I happened to have everything on hand already – paint, canvases, and the awesome butterfly punch.

We just watercolored on the back of old homework pages.  I don’t have the all-over-the-page punch like Meg does, so I just cut the painted paper into strips and let the girls punch then out that way.  We used the hot glue gun to glue them to the canvases.  Such a fun and easy project!  I hung them up in the play room 🙂
