meal plan monday

We got our first vegetable delivery this morning…the product looks amazing and I can’t wait to use it up in some new recipes!

March 28 – April 3
MONDAY
Breakfast: eggs, toast, fruit
Lunch: soup, salad, fruit
Dinner: sour cream noodle bake, roasted veggies

TUESDAY
Breakfast: oatmeal, berries, yogurt
Lunch: leftovers
Dinner: leek and fingerling potato hash, poached eggs, citrus salad with honey basil dressing

WEDNESDAY:
Breakfast: smoothies, granola, yogurt
Lunch: turkey wraps, salad
Dinner: mixed greens and sausage soup with cornmeal dumplings

THURSDAY:
Breakfast: eggs, toast, fruit
Lunch: soup, salad
Dinner: teriyaki salmon, asian cabbage and noodle salad

FRIDAY:
Breakfast: granola, yogurt, fruit
Lunch: grilled cheese sandwiches, tomato soup,
Dinner: taco pizza, marinated cucumbers and tomatoes, carrot salad

SATURDAY:
Breakfast: waffles, fruit, eggs
Lunch: out
Dinner: cherry chai chicken, roasted potatoes, roasted asparagus

SUNDAY:
Breakfast: oatmeal, fruit, yogurt
Lunch: out
Dinner: cheesy brown rice and red bean casserole, salad, fruit

Extras:
Oatmeal honey bread, chocolate marshmallow cookies
